Who doesn’t want a bowl of yummy soup on a chilly, crisp fall day? Sy gets asked about his soup a lot so we thought we’d share. It really is good and so super gentle on the stomach. Remember for his therapy, organic is a must! This soup also makes a great side to any healthy meal.

This recipe yields about 10-15 1 cup servings (depending on consistency)

Ingredients (all organic):
2 lbs of potatoes
6-8 stalks of celery–you can also use 2 medium celery knobs but we substitute the celery because we can’t find them
3-4 lbs of tomatoes
4 leeks
4 medium onions
garlic as desired
a little parsley
2 medium parsley root–we actually always leave this out because this is another goody we can’t get our hands on

1. Wash vegetables: Fill the sink with cold, tap water about half full or more. Add 1 cap full of food grade hydrogen peroxide or 1 drop of Lugol's Solution. Wash and scrub thoroughly. For leeks: Cut 2/3 of dark green leaves off and cut down the middle and take apart to wash. Loads of dirt gets stuck in there.

2. After you have washed the veggies, just cut them coarsely. Seriously, just get them cut–nothing fancy. Also, do not peel them. Place them in large stainless steel or glass pot and add enough distilled water to cover about an inch of the bottom of your pot. Add more water for a more brothy soup and less if you want it thicker. That part is just your taste and consistency preference. Simmer on low heat for three hours–stirring occassionally. Then put through a food mill in small portions; mill it so that hardly any fibers are left.

3. This will keep well in a covered in a glass bowl or Corningware in your refrigerator no longer than 2 days. Warm up on your stove (no cheating with a microwave). It actually heats up quickly!

Give it a try and let us know what you think. Especially if you are suffering with any type of stomach or digestive issues, this is a soup that is really gentle on your system because the fibers have already been broken down in the food mill. This allows the soup digest easily.
